Ingredients You Will Need

To make classic hummus, you only need a handful of simple ingredients:

  • Chickpeas (Garbanzo beans): 1 can (15 oz) or about 1.5 cups cooked chickpeas

  • Tahini: 1/4 cup (sesame seed paste)

  • Fresh lemon juice: 2 to 3 tablespoons

  • Garlic: 1 to 2 cloves, minced

  • Olive oil: 2 tablespoons, plus extra for serving

  • Ground cumin: 1/2 teaspoon

  • Salt: 1/2 teaspoon or to taste

  • Cold water: 2 to 3 tablespoons, to adjust texture

Using canned chickpeas saves time, but cooking dried chickpeas yourself can enhance the flavor and texture.

Preparing the Chickpeas

If you use canned chickpeas, drain and rinse them well under cold water. This removes excess salt and can reduce the "canned" taste. For a smoother hummus, you can peel the skins off each chickpea by gently rubbing them between your fingers. This step is optional but makes a noticeable difference in creaminess.

If you prefer cooking chickpeas from scratch, soak 1 cup of dried chickpeas overnight in plenty of water. The next day, drain and rinse them, then simmer in fresh water for about 1 to 1.5 hours until tender.

Step by Step Instructions

Follow these steps to make classic hummus:

  1. Combine tahini and lemon juice

Place the tahini and lemon juice in a food processor or blender. Blend for about 1 minute until the mixture thickens and lightens in color. This step helps create a creamy base.

  2. Add garlic, cumin, and salt

Add the minced garlic, ground cumin, and salt to the tahini mixture. Blend again for 30 seconds to combine.

  3. Add chickpeas

Add half of the chickpeas to the food processor and blend for 1 minute. Then add the remaining chickpeas and blend until smooth, about 1 to 2 minutes. Scrape down the sides as needed.

  4. Adjust texture with water and olive oil

While blending, slowly add 2 to 3 tablespoons of cold water to loosen the hummus. Then add 2 tablespoons of olive oil and blend until creamy and smooth. If the hummus is still too thick, add more water, one tablespoon at a time.

  5. Taste and adjust seasoning

Taste your hummus and add more salt, lemon juice, or garlic if needed. Blend again briefly to mix.

Tips for Perfect Hummus

  • Use fresh lemon juice for the best flavor. Bottled lemon juice can taste flat.

  • Adding a pinch of baking soda when cooking dried chickpeas helps soften them faster.

  • For extra smooth hummus, peel chickpeas before blending.

  • Use good quality tahini; it greatly affects the final taste.

  • Serve hummus at room temperature for the best flavor.

  • Garnish with a drizzle of olive oil, a sprinkle of paprika or sumac, and fresh parsley for a beautiful presentation.

Serving Suggestions

Classic hummus pairs well with many foods:

  • Warm pita bread or pita chips

  • Fresh vegetable sticks like carrots, cucumbers, and bell peppers

  • As a spread on sandwiches or wraps

  • Alongside grilled meats or falafel

  • Mixed into salads for extra creaminess

Hummus also makes a nutritious snack packed with protein, fiber, and healthy fats.

Storing Your Hummus

Store homemade hummus in an airtight container in the refrigerator. It keeps well for up to 5 days. If it thickens after refrigeration, stir in a little water or olive oil to loosen it before serving.
