Ingredients for Large Batch Borscht

To prepare this hearty soup, gather the following ingredients:

  • 7 lbs boiled beets, peeled and shredded

  • 3 lbs green cabbage, shredded

  • 3 lbs russet potatoes, diced

  • 2 lbs carrots, diced

  • 2 lbs yellow onions, diced

  • 1 lb celery, diced

  • 1 cup tomato paste

  • 1/2 cup white vinegar

  • 1/2 cup lemon juice

  • 1/3 cup sugar

  • 1/4 cup salt (adjust to taste)

  • 2 tbsp black pepper

  • 2 tbsp paprika

  • 1/4 cup minced garlic

  • 1/2 cup neutral oil or butter

  • 2 gallons water or broth

  • Optional: fresh dill and sour cream for serving PS. I added three pounds of browned ground beef (optional)

This combination of vegetables and seasonings creates a balanced, hearty soup that is both filling and flavorful.

Step-by-Step Instructions

Build the Base

Start by heating the oil or butter in a large stockpot. Add the diced onions, carrots, and celery. Sauté these aromatics until they soften and release their fragrance, about 5 to 7 minutes. This step forms the flavor foundation for the soup.

Add Potatoes

Next, stir in the diced potatoes. Cook them for about 5 minutes, allowing the potatoes to absorb the flavors from the sautéed vegetables. This also helps the potatoes start to soften before adding the rest of the ingredients.

Add Cabbage

Fold in the shredded cabbage and cook until it begins to wilt. The cabbage adds texture and a slight sweetness that balances the earthiness of the beets.

Add Beets

Add all 7 pounds of shredded boiled beets to the pot. Stir well to combine the vibrant color and flavors with the other vegetables. The beets are the star ingredient, giving the soup its signature deep red hue and sweet, earthy taste.

Season the Soup

Add salt, black pepper, minced garlic, paprika, sugar, and tomato paste. Mix thoroughly to distribute the seasonings evenly throughout the soup. The tomato paste adds richness and a subtle tang, while sugar balances the acidity.

Add Liquid

Pour in 2 gallons of water or broth, depending on your preferred soup thickness. Using broth will add extra depth, but water works well too. Bring the mixture to a boil.

Simmer

Once boiling, reduce the heat and let the soup simmer gently for 60 to 90 minutes. This slow cooking softens the vegetables and allows the flavors to meld together fully.

Balance the Flavor

At the end of cooking, stir in the white vinegar. The vinegar brightens the soup and adds a pleasant acidity that cuts through the richness. Taste and adjust salt, sugar, or vinegar as needed to achieve the perfect balance.

Let It Rest

For best results, let the borscht rest for at least 30 minutes before serving. If possible, chill it overnight. This resting period deepens the flavors, making the soup even more delicious.

Tips for Serving and Storing

  • Serve borscht hot with a dollop of sour cream and a sprinkle of fresh dill. These toppings add creaminess and a fresh herbal note that complements the soup.

  • Borscht pairs well with rye bread or garlic rolls for a complete meal.

  • Store leftovers in airtight containers in the refrigerator for up to 5 days. The flavor continues to improve after resting.
